在异国他乡,你会怎样用有限条件还原熟悉的味道?我们一家在雨后的利物浦厨房里,与新加坡友人尝试鸡饭制作,感受食物与陪伴的意义。
How do we recreate the familiar flavours of home when we’re abroad and resources are limited? After a rainy afternoon, in our AirBnB kitchen in Liverpool, our family tried making chicken rice with a close friend from Singapore while savouring the meaning of food and companionship.
🌏 缘起
当Benny听说疯猴子对海南鸡饭执念颇深时,这位新加坡老饕眼睛一亮:“走!去中超!” 于是在利物浦下过雨的午后,我们挤在Airbnb的小厨房里,开始了一场跨文化的味觉实验。
🍗 庖丁解鸡
- 精选四大鸡腿,刀刃轻挑间分离出金黄鸡皮与透亮脂肪(这可是后续的灵魂材料!)
- 冷水下锅加入鸡腿,配葱姜蒜三重奏,大火煮沸转文火慢炖,渐渐熬出乳白色汤底——传说中的 “鸡骨茶色” 不过如此吧!

🔥 双灶交响曲
- 主灶台:鸡汤咕嘟冒泡时,顺手烫熟奶白菜与菜心,淋上现熬葱油+蚝油,翡翠般的色泽光可鉴人
- 副战场:鸡油与米粒的华尔兹——没有电饭锅?没关系,我们用炒锅来煮饭!晶莹米粒被鸡油镀了一层金,蒜蓉与姜末的香气精灵般在厨房乱窜,就算没有斑兰叶也能复刻新加坡味!

🧂 魔法酱汁
Benny神秘兮兮调制的黑金组合:酱青打底,黑酱油调色。最后,我浇上滚烫葱油——“滋啦” 一声,南洋风味觉醒!
🍚 开盖瞬间
打开锅盖,发现底层焦了,怎么办?三个脑袋同时凑过去:油润饭粒泛着琥珀光,看起来赏心悦目!没事,炒一炒更香脆!我们尝了一口锅巴,还行,有点意思!
💬 后记
雨过天晴,夏日的利物浦凉意习习,屋内却飘着鸡饭的暖香。没想到在英国,我们用平价食材也能复刻组屋楼下的味道。原来所谓解解乡愁,不过是一锅被认真对待的鸡饭,和愿意陪你折腾的朋友。

When a close friend of the QZ family, Benny, heard about Crazy Monkey’s love for Hainanese Chicken Rice, he rallied everyone for a cooking session in a Liverpool Airbnb. They prepped chicken legs, simmered them with classic aromatics, and made a rich, milky broth. The rice, cooked and stir-fried in chicken fat, filled the kitchen with mouth-watering scents. Benny whipped up a mysterious dark sauce, and the group poured hot scallion oil over everything for that authentic Southeast Asian sizzle. The rice burnt a little, but they just laughed it off and savoured the crispy bits. As the rain cleared, the kitchen continued to glow with warmth and laughter. They realised that recreating a taste of home is really about the people you share it with and the willingness to put in the collective effort—even if things didn’t go perfectly.
